beer marinated Chicken

This recipe is so good. You get a hint of beer flavour and the moistest chicken you have ever tasted, even as leftovers a few days from when you cooked it fresh (which is hard to do) 

But all you do is you mix 1 can of bud, some garlic powder, poultry seasoning, paprika and some italian seasonings into the mixture. You then mix all those ingredients together and then place the washed chicken wings/breasts/thighs/ whichever you want and let it marinate overnight (some people say 30 minutes but it tasted real good overnight) 

Then the next day you would place the chicken in a small pan and pour the rest of the marinade in the pan. Let the chicken cook on 400 F for about 30-40 minutes. Then, it is cooked and all good.

Beet chips

Just beet it!

So my friend Mikaela and I tried to make these "chips" That just had olive oil, sea salt and beets. So yummy but so messy. After the end of it you just looked like you killed barney!

So to cook them you just put them in the oven for 350 and let it cook for 20 minutes then you turn them over and let them cook for another 20 minutes.

healthy lunch

Today I had the most yummiest. non guilt lunch I have had in a long time. I made a harvarti and spinach grilled cheese sandwhich and roasted asparagus with feta and tomatoes. 
 Yup as healthy as I think a lunch could get. 

But for the recipes

Havarti-spinach grilled cheese sandwhich

Ingredients:
2 pieces of bread of your choice
Butter a side of each piece of bread 
place two thin slices of havarti cheese on both pieces of bread
Lift you grill up and place one of the pieces of bread on the grill
sandwich in the spinach to the sandwich 
place the other piece of bread on top 
Press the grill down
Wait 5 minutes and Ta Da!

Vegetable Fajitas

Nothing says having a depressing day than cooking a good healthy meal to make you feel better. I made this meal earlier last week..and it is one of my favourites. Super easy to make and super yummy! 

Vegetable Fajitas
Ingredients:

1 onion
1 red pepper
1 green pepper
1 yellow pepper
1 garlic clove, crushed
1 cup of mushrooms
6 tbsp of vegetable oil
2 tbsp medium chilli powder
salt and freshly ground black pepper

To serve:

4-6 tortillas, warmed
1 lime, cut into wedges
guacamole (wholy guacamole is my favorite)

Directions:
1. Slice the onion. Cut the peppers in half, remove the seeds and cut the flesh into strips. Combine the onion and peppers in a bowl. Add the crushed garlic and mix lightly. 
2.  Put the mushrooms into the pepper mix. Mix the oil and chilli powder in a cup pour over the vegetable mixture and stir well. Set aside.
3. Heat a frying pan or wok until very hot. Add the marianted vegetables and stir-fry over high heat for 5-6 minutes, until the mushrooms and peppers are just tender. Season with salt and pepper. Spoon the filling on to each tortilla and roll up. Garnish with guacamole and lime wedges.

New Goal for the New year

This year I have a new goal for this year. My goal is to do like  julie and Julia child project. Instead of cooking every single recipe out of a book, my goal is to try a new recipe each week for a year so that I can get better at cooking and try recipes that I would not normally have tried.

So wish me luck in the new year with this goal and coming up this friday is vegetable fajitas! so stay tuned to see how they turned out and such!
